Gluten Free Pasta with Broccoli and Feta Cheese

We’ve been exploring different pasta options as of late. We love pasta in all shapes and sizes but wanted to come up with recipes that excluded red sauce and meat. Especially since I’m vegetarian! With gluten free pasta, broccoli and feta cheese as the main ingredients, we added a bit of olive oil, fresh garlic, basil, oregano and … voila! Gluten Free Pasta with Broccoli and Feta Cheese!

And now on to the Gluten-Free Pasta with Broccoli and Feta Cheese recipe!

Ingredients:

  • 1 pound gluten-free pasta. This recipe would of course work fine with regular pasta if you’re not gluten-free.
  • 6 oz package Nikos Feta Cheese
  • 2 cups broccoli heads
  • 3-4 cloves garlic – minced or pressed
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon fresh oregano – chopped
  • 1 teaspoon fresh basil – chopped
  • salt
  • pepper
  • butter

Pasta with Broccoli and Feta Cheese cooked ingredients - Simple Sojourns

Directions:

  1. Cut your broccoli into bite size pieces and steam until cooked but still firm.
  2. Boil pasta ‘al dente’ according to package directions. Drain.
  3. Sauté garlic in two tablespoons olive oil.
  4. Toss pasta, broccoli, feta cheese, Garlic/oil mixture, oregano and basil in large bowl.
  5. Serve with salt and pepper to taste along with a bit of butter.

Ingredients

Notes
  1. Regular pasta may be substituted for gluten-free.
